About Carbo AI

Empowering Africa's Diabetes Nutrition

Carbo AI is an innovative artificial intelligence platform developed to simplify carbohydrate estimation and
improve nutrition education for people living with diabetes and other lifestyle-related conditions. The project
combines nutrition science, artificial intelligence, digital health, and behavioural change to empower
individuals to make informed food choices.


Unlike conventional calorie-counting apps, Carbo AI focuses on Carbohydrate Intelligence®, enabling users to
understand how the carbohydrate content of meals influences blood glucose management. It has been
developed through collaboration between the Technical University of Kenya, the Diabesity Nutrition Centre,
and national and international research partners

The People Behind Carbo AI
Dr. Alice A. Ojwang is a Registered Dietitian/Nutritionist, Certified Diabetes Educator, researcher, and university lecturer dedicated to transforming diabetes care through innovation, education, and technology. With more than 25 years of professional experience, she has helped thousands of individuals improve their health through evidence-based nutrition and lifestyle interventions. She is the founder of the Diabesity Nutrition Centre, creator of the Diabetes Total Lifestyle Change (DTLC) programme, and pioneer of Mycarboai®. As Project Lead for Carbo AI, she is advancing the use of artificial intelligence to make nutrition guidance more accessible, practical, and personalised.

Dr Alice Achieng Ojwang
Project Lead
Dr. Janet Kajuju Malla is a Lecturer and Researcher in Food, Nutrition, and Dietetics at the Technical University of Kenya (TUK), with over 30 years of experience in higher education, academic leadership, and nutrition research. She currently serves as the Program Leader for Human Nutrition and Dietetics, where she provides academic leadership in curriculum development, teaching, research, and mentorship. Dr. Malla holds a PhD in Food, Nutrition and Dietetics from Kenyatta University. Her doctoral research investigated the effects of Moringa–finger millet porridge on the protein and vitamin A status of children with cerebral palsy in Nairobi City County, contributing to evidence-based nutritional interventions for vulnerable populations. She also earned a Master of Science in Foods, Nutrition and Dietetics from Kenyatta University, where her research focused on childhood obesity among pre-adolescents in Nairobi, and a Bachelor of Education (Home Economics) with Second Class Honours (Upper Division). Since joining the Technical University of Kenya , Dr. Malla has been actively involved in teaching undergraduate and postgraduate students, supervising research, and advancing scholarship in human nutrition and public health. Her research interests encompass child nutrition, obesity, public health nutrition, food-based interventions, and community nutrition, with a particular emphasis on improving nutritional outcomes among children and other vulnerable populations.

Dr. Edwin Ouma Ngwawe is a lecturer in the Department of Computing and Information Technology at the Technical University of Kenya, a software engineer, technology consultant, and Patron of the University Internet of Things (IoT) Club. He has extensive experience in mobile application development, enterprise systems, artificial intelligence, the Internet of Things (IoT), systems security, and digital transformation. He is passionate about leveraging emerging technologies to develop secure, innovative, and user-centred solutions that address real-world challenges. As the lead (mobile application) developer behind the AI Carbo, Dr. Ngwawe combines academic research with practical software engineering to create intelligent technologies that enhance learning, productivity, and decision-making. His professional interests include artificial intelligence, Android application development, IoT, systems security, cloud computing, and enterprise information systems. He is committed to advancing research, fostering innovation, and mentoring the next generation of technology professionals.

Dr. Edwin Ouma Ngwawe
I am a Clinical Nutritionist currently pursuing a Master of Science in Community Nutrition at the Technical University of Kenya. A mentee researcher in cardiovascular disease management, with a particular interest in diabetes education, carbohydrate counting, glycaemic control, and the application of digital health and artificial intelligence to improve nutrition care, dietary assessment, and patient self-management. I have experience in clinical and community nutrition, public health research, and multidisciplinary project coordination. My expertise includes qualitative and quantitative research, the Nutrition Care Process (NCP), stakeholder engagement, community mobilization, field implementation, project coordination, proposal development, evidence synthesis, and AI data curation, with specialized experience in food photography data curation, food image annotation, quality assurance, and nutrition care process applications for machine learning.
